I started the year 2017 participating in the Food in Jars Challenge which will give you a new challenge each month to practice a specific canning technique! Imagine that! You get step-by-step guidance from preserving blogger and authority Marisa McClellan, author of Food in Jars and Naturally Sweet Food in Jars and Preserving by the Pint. First on the list was making a citrus marmalade that you could adapt to suit your taste.
I chose to make a combination of Bitter Seville Oranges and Meyer Lemons to have the perfect balance of bitterness and sweet. I had never made a marmalade before and was intrigued by the process of using the whole fruit. It was surprisingly easy to make following Marisa’s guidance through her postings on the special Facebook group or her emails. The results: delicious! See for yourself. For the recipe click here
